Fig Pie recipe

Ingredients:

1 9-inch prepared pie crust
3 eggs
1 cup brown sugar
½ cup apple juice
3 tablespoons lemon juice
1 teaspoon grated lemon zest
1 teaspoon minced fresh ginger
1 teaspoon vanilla
1 ½ cups chopped dried figs
1 cup chopped pitted dates
1 cup chopped pecans

Preparation Instructions:

1) Preheat oven to 350°F. Combine eggs, brown sugar, juices, zest, ginger, and vanilla in a large bowl; whisk well to blend. Stir in figs, dates, and pecans. Pour into prepared pie crust. Bake 40 to 50 minutes, until filling is set and crust is golden.

Notes about this recipe:

Autumnal figs make for a purely seasonal pie that will have you forgetting peaches and apples. Serve this warm with fresh whipped cream for the ultimate fall dessert.
